2die4 Live Foods uses the ancient art of fermentation to produce nuts which
are both a taste treat and amazingly good for you. The unique fermentation process, developed by food alchemist Clive Lawler,
which involves long-soaking in filter water, salt and fresh whey (sourced from non-animal rennet) and slow dehydration at low temperatures, produces
nuts which easily digestible and free from toxins and anti-nutrients.
This gentle, slow food process has a welcome by-product – the nuts are
absolutely delicious.
Modern friendly science has shown that all raw and dried foods, especially
seeds such as grains, beans, pulses and nuts, abound with several different
naturally occurring chemicals, broadly termed “anti-nutrients”, which are not
intended for human consumption. These anti-nutrients, such as phytic acid,
oligosaccharides, oxalic acid, tannins and others, are part of a plant’s own
immune system and protect the seed’s ability to germinate, and so on. But
they wreak havoc upon the human digestive system.
Raw nuts and seeds also contain proteins, carbs, maltose and other
nutrients which are difficult to break down when ingested, hence they too
end up being toxic in the body, but fermentation fixes that too. During
2die4’s activation process, nuts swell during soaking and, racing towards
sprouting, their natural defences drop away, while at the same time the slow
fermentation produces nuts that the human stomach can readily digest.
Unlike heat or roasting, the process also preserves the superb but delicate
oil in nuts…..hence the superlative flavour of 2die4 nuts. Our nuts become
crunchier, tastier, and far, far healthier than the original nut.
Not surprisingly, in ancient Greece, the traditional masters of fermentation,
the word for “fermentation” means alchemy.
